Fried pickled tripe (tripe recipes from Maine)

Ingredients


1.5 pounds of pickled tripe
2 tablespoons of flour
1 egg
1 clove of garlic
Basil leaves
Mustard
Olive oil
Pepper
Salt

Directions

Cut the pickled tripe into small rectangles. Parboil them for approximately 5 minutes, then drain the tripe and dry it thoroughly. Mix the flour with the fresh chopped basil and lightly season with salt and freshly ground pepper. Dip the tripe pieces into the beaten egg, then in the seasoned flour. In a wide skillet, sauteé the crushed garlic in oil over medium heat. When the oil is hot, remove the garlic and fry the tripe pieces, just long enough to brown them on both sides (2-3 minutes). Serve with mustard.
